Nutty tasting Jerusalem artichokes are a winter treat. Delicious roasted or boiled and pureed for a full-flavoured soup or peel and used similarly to water chestnuts. Jerusalem artichokes are $10-$14 a kilo. Tip: When using to make a creamy Jerusalem artichoke soup leave the skin on; this gives the soup a rich caramel colour and adds to the fibre content.
Fennel is a winter favourite; firm, crisp bulbs with a delicate aniseed flavour are delicious enjoyed raw or cooked. Team raw thinly sliced fennel with citrus segments or a medley colour baby tomatoes in a salad. If cooking fennel cut into wedges, braised or baked and served with lamb shanks or a leg of lamb. Large bulbs of fennel are a bargain at $1.50-$2.50 each.
Cavalo Nero, also known as black or Tuscan cabbage, has deep green leaves and is sold in bunches. It has a similar flavour to cabbage with a slight-sweet nutty flavour. Try adding to chunky vegetable soups like minestrone or add to a healthy stir-fry like this stir-fried greens and chicken with sweet soy and peanuts. Cavalo Nero, is $4-$4.50 a bunch.
